Ever noticed those beautifully decorated icing cookies at the stores and gourmet shops that can be given as gifts or sold at various occasions and events? Do you want to learn the art of cookie decorating to make delectable cookies any time of the year for fun or even to sell? If you’re looking at cookie decorating as a hobby or profession and you don't know where to start, this cookie decorating course is for you!

CTS College offers a new suite of skilled and practical training workshops that aim to help individuals expand their talent and discover their hidden creativity in the field of cookie artistry and design.

With over a decade of experience as a professional cookie decorator, Pastry Chef and Cake Designer Melanie of Melrose Cakes, has designed this course with YOU in mind. She will be by your side as you become the next Cookie Design Artist.

Who Should Attend

  • This workshop is open to all skill levels and even beginners.
  • Persons desirous of starting their own business/ home based business; be your own boss (BYOB).
  • Entrepreneurs / Amateur Cookie Artists interested in learning more professional techniques and methods for an improved product.
  • The “Do it Yourselfers” – DIY.
  • Persons who would like to learn a marketable and creative new skill.
  • Persons interested in becoming a Cookie Design Artist.

Tools

  • This is an all-inclusive workshop; all materials, recipes and tools will be provided.

Learning Outcomes

Participants of this workshop will design and decorate a set of cookies related to a specific theme.

Upon completion they should be able to:

  • Make proper cookie icing for any cookie decorating method
  • Prepare cookie dough for successful baking of cookies
  • Design a cookie set and properly flood/outline designs with ease
  • Successfully dry and store cookies depending on the environmental factors
  • Aesthetically pack and price the finished product

SPECIAL NOTE: Each participant also gets to design and take away a custom cookie gift box using their cookies designed in class.

Course Content

You will learn the following methods and techniques:

  • How to make cookie icing for decorating.
  • Achieving the right icing consistency for flooding, piping details and outline.
  • Coloring and blending icing.
  • Cookie decorating basics: wet on wet, wet on dry, borders and beads, marbling icing.
  • Making icing embellishment and transfers: piped flowers, eyes, bows and monogram transfers.
  • Introduction into monogram cookies.
  • Cookie drying and storage techniques.
  • How to package and price cookies.
  • Cookie dough demonstration.
  • Troubleshooting
  • Q&A

Delivery Mode

Face-to-Face Classes

This course will be delivered via face-to-face classes. As such, students who have enrolled in the course would be expected to attend the classes at the designated location.

Assessment

Assessment

This programme is a hands-on, practical training class; assessment will be done based on the pieces produced in class, along with the final presentation of end product.

Each student will be working on their own individual cookie sets.

Pastry Chef | Cake Designer - Melanie Ramlochan

Chef Melanie has a passion for sugar craft. She has a decade of experience in the culinary/sugar craft field and specializes in sugar flowers, gourmet and wedding cakes. Melanie has trained with both local and international mentors and loves sharing her passion and knowledge in the classroom with budding enthusiasts and students.

Her sweet creations have garnered a reputation in Trinidad and Tobago with an estimable reputation for creating extraordinary tasting and attractive cakes, desserts and cookie designs. She continues to push the boundaries of the sweet course with complex, elegant and delectable creations inspiring a new and trending service to satisfy a growing demand for events and occasions.

Chef Melanie owns and operates her acclaimed cake and dessert business Melrose Cakes (IG @melrosecakestt). She is a past student of CTS College and holder of a BSc (Hons) Computer Science. Her personal motto is it is never too late to redefine your career part and find your passion.
